If you are a supporter of Meat Free Monday or would just like a delicious vegetarian recipe that all the family will enjoy, how about this Vegetarian Cottage Pie.
It’s a real favourite in our family especially when the weather’s cold and grey!
Ingredients
1 finely chopped onion
Vegetable oil
350g Quorn or other Meat Free Mince
100g frozen peas, or if you’re not keen on peas replace with carrots or other veg
300 mls Bisto gravy granules mixed with hot water (yes, Bisto is suitable for Vegetarians)
800g potatoes, boiled and mashed, it’s up to you whether you use milk and butter, I do, but try not to let the mash be too wet and sloppy.

Method
In a large frying pan, fry the onions in some vegetable oil until soft. Add the vegetarian mince, peas and any other vegetables. The vegetarian mince does not need to browned in the frying pan like meat mince does but do ensure it has been fully heated through or if using frozen mince, completely thawed and warmed.
Add the gravy to the pan and let it cook for a few minutes until all the ingredients are lovely and hot. Add salt and pepper to taste.
Transfer the mixture to an oven proof dish.
Spoon on the mash potato until the mince mixture is completely covered. And sprinkle with some black pepper if you like.
Place in the oven on 200C for about 25 minutes or until the mash potato has started to go slightly brown.
Serve and enjoy!
